DeepLife and Gourmey Partner to Digitally Engineer the Future of Cultivated Meat

Abstract

Paris, France, June 26th, 2025 - DeepLife, a leader in AI-driven cellular digital twin technology, and Gourmey, a Paris-based cultivated meat pioneer, have partnered to develop the world’s first avian digital twin — a virtual replica of poultry cells engineered to optimize growth conditions, nutrient density, and flavor expression in cultivated meat. The collaboration combines DeepLife’s biology simulation engine with Gourmey’s proprietary cell cultivation platform, accelerating the path toward scalable, cost-effective, and high-quality alternative proteins. Joint research findings have been submitted for publication and are available on BioRxiv.

With cost parity still out of reach for most first-generation cultivated meat systems, technologies like DeepLife’s are emerging as essential tools for second-generation players. By simulating cell behavior under various biological and environmental conditions, DeepLife’s platform enables companies to fine-tune variables such as media composition and metabolic efficiency, before conducting costly wet lab experiments.

Gourmey is one of the few cultivated meat companies with independently validated and viable economics. A 2025 techno-economic assessment conducted by Arthur D. Little confirmed Gourmey’s ability to achieve €7/kg ($3.43/lb) production costs at a commercial 5,000-liter scale — the lowest figure reported to date in any third-party techno-economic model — without reliance on giga-reactors, scaffolds, or pharmaceutical-grade inputs. The integration of DeepLife’s AI enhances this system by modeling cellular responses to environmental inputs across genomics, transcriptomics, and metabolomics layers.

The DeepLife-Gourmey collaboration focuses for now on cultivated duck and cultivated poultry products, leveraging DeepLife’s systems biology engine to simulate and enhance key cellular behaviors. With this AI-enabled toolkit, Gourmey’s scientific and engineering team is already running virtual experiments to refine feed formulas, boost protein yield, and tune sensory attributes such as umami intensity and fat structure. These optimizations are actively informing commercial-scale production and supporting regulatory filings underway in Europe, the U.S., and Asia.
